A book opens on indigenous food

TRACING the Philippines’ indigenous tribes and their diet forms the backdrop of a cookbook to introduce recipes never before published.
Master Chef Marx Canoy, of Newcastle’s Travelodge hotel, returned from visits to the country’s hinterland prepared for his next cookbook: The Munting Nayon Recipes.
“Munting Nayon, or ‘Humble Nation’, because the book will be about recipes I learned from the Philippines’ indigenous tribes such as the Aeta and Inagta in Visayas’ Negros Occidental,” Canoy said.
“I savoured the delicious ‘Ginataang Paka’ of ricefield frogs, and ‘Laswang Hagnaya’ of charcoal-grilled ‘Bunog’ river fish wrapped in banana leaves.”
In the island of Palawan, he was introduced to a delicacy called ’Tamilok’, a wood worm extracted from a native ‘Bakhaw’ tree, eaten raw and dipped in spiced vinegar with onions, ginger and chilli.
The name “Tamilok” came from American soldiers in the 1940s during World War II seeking cover in mangroves around Palawan.
Stories have it that GIs, upon watching the natives pick the wood worm, remarked: “Tommy, look!” And they consumed the delicacy for survival.
Canoy also visited the ‘Atah’ or ‘Itoman’ tribe and experienced their diet and recipes.
“I am excited about bringing these recipes, some of which which I am adapting for the Australian palate, with my new Munting Nayon Recipes,” he said.
“At the same time, I will incorporate documentaries on the Filipino tribes whom I visited. That would be a piece of history.”
