Flavours of the Philippines in Sydney

The Philippine Department of Tourism, Philippine Airlines and the Grace Hotel are proud to announce that The Flavours of Philippines will return to The Grace Brasserie commencing from 16 July – 2 August 2015. Dine and go in the draw to win a trip to Manila with Philippine Airline as the major prize with plenty more giveaways to be won.

This year, three top chefs from the Philippines will be flown to Sydney especially for the food festival. Michelle Adrillana, Celebrity Chef and Food Consultant will be leading the team with Celebrity Chef Sydney Roque and Pastry Chef Angelica De Leon accompanying her.
Chef Michelle, most recently was celebrity chef at The Filipino Food Festival at The Garden Hotel in Guangzhou, China. She hold numerous awards and is a highly sought after chef at many festivals worldwide.

With a population of over 99 million people stemming from 120 different ethnic groups, the Philippines is made up of more than 7,000 islands and has a colourful history. With an abundance of cultural influences, this archipelago has formed a rich culinary identity. Blessed with an abundance of seafood, tropical fruits and a distinct use of naturally sour and salty flavours, Filipino food is a subtle mix of its Asian neighbours as well as featuring influences from its early Spanish colonisation.

Flavours of the Philippines Food Festival will serve an array of exotic, succulent, spicy and aromatic dishes over the two week Food Festival. Lunch and dinner will be served buffet style in the historic Grace Brasserie. Some of the food that will be served includes:

Appetizers and Salads
Fishballs with Sweet Chili Sauce
Crunchy Bittermelon Salad (Ampalaya Salad)
Grilled Eggplant Salad (Ensaladang Talong)

Hot Buffet
Filipino Sweet and Sour Soup (Sinigang)
Seafood with Vegetables in Peanut Sauce and Shrimp Paste (Seafood Kare Kare)
Pork Adobo
King Crabs in Coconut Ginger Sauce

Carving Station
Roasted Crispy Pork Belly stuffed with Mushroom Adobo Rice
 
Dessert
Caramel Custard (Leche Flan)
Banana Fritters with Jackfuit wrapped in Spring Roll Paper (Turon)
Halo-Halo Station (Melange of Sweetened Fruits and Beans)
